New Year’s Black Eyed Peas (Slow Cooker)

black eyed peasIn my family we have always had Black Eyed Peas on New Year’s Day, and I have continued that tradition with The Hubby and I.  I normally pair mine with some fried potatoes (not very WW friendly, but oh so good) and some cornbread.   Cornbread has become quite a debate in our home, The Hubby loves a sweet cornbread and I love the savory cornbread so many times you will find 2 pans of cornbread being made, but with these I actually prefer the sweet…just don’t tell The Hubby.

I love this recipe for so many reason, first it is a slow cooker recipe which is perfect for new years day and second it has a little bit of heat which helps enhance the flavor of the black eyed peas.   I also LOVE this recipe as each serving (about 1 cup) is only 3 WW+ points, it cant get much better.

It’s so funny every new year’s I am reminded how much I like black eyed peas but always forget about them throughout the year, but with this recipe I think they might make another appearance this year.  Plus when you pair it cornbread & fried potatoes you will want to fix it again and again.

Ingredients
  1. 1 1/2 lb dried black eyed peas, rinsed and soaked overnight
  2. 4 cups water
  3. 8 oz smoked lean ham steak
  4. 1 medium onion
  5. 2 cloves garlic minced
  6. 3 oz can green chilies
  7. 1 1/2 tsp chili powder
  8. 1 1/2 tsp pepper
  9. 1 tsp cumin
Instructions
  1. Soak beans overnight in a large bowl with 6-8 cups of water. Drain the next morning
  2. Add beans to the slow cooker
  3. Add in water, ham, onion, green chilies, garlic, chili powder, pepper and cumin
  4. Stir gently to combine
  5. Cook on high for 6 hours and check seasoning
  6. Add in additional salt and other seasonings as necessary, keep cooking until ready to serve
